Veggie Smoothie

I love to cook, but that doesn’t always mean my dishes are a hit.   I’ve had a few polite friends who would always consume my culinary creations and ask for the recipes, which would give my confidence a boost, but sometimes I can’t help but wonder if they were just trying to spare my feelings.  Maybe I’m my own worst critic, but I can also give myself credit when it is due. Lately, I’ve been patting myself on the back for finding a way to sneak vegetables into my kids’ diet and still make it tasty and appetizing.  That’s a huge deal in my household! I created a smoothie that is a hit for my kids Aria and Nicolas. They expect me to make this drink everyday after school to accompany their snacks, and I’m so happy to oblige.   I determine the ingredients that might fit my children’s taste buds and level of sweetness, and then I use whatever vegetables I may have on hand to supplement.

Hail to the kale!

The typical smoothie that we often create has the following ingredients: 1) One handful of ice cubes 2) One handful of frozen mixed berries and pineapple 3) One small banana 4) One handful of a mixed salad kit that includes chopped brussels sprouts, broccoli, cabbage, kale and chicory. 5) 1 to 2 TBS grape juice concentrate (to taste) 6) A splash of nut milk and water I blend the ingredients until it reaches a desired consistency, and viola!

I serve the smoothie to accompany Nicolas and Aria’s favorite snacks of cheese, crackers and homemade blueberry muffin. Yum!!!!
